Born in France, Jacques started his career growing up in the famous Bourg en Bresse region of France. This is where his appreciation of fresh ingredients and dishes prepared ‘a la minute’ began. Jacques started his career at catering college in France. While Jacques French background is responsible for his dedication to beautifully flavoured and presented dishes, he credits his mothers rustic Italian cooking with the flavor and authenticity of his food.
Jacques began his career in wine and acquired a palette for fine wine. Blue Sail, while an approachable beach restaurant has an excellent offering of diverse and interesting wine.
As his career progressed he became passionate about food and the importance of delivering not simply great food but impeccable service.

Jacques vision when he opened Blue Sail was to offer a beautiful location on the beach with equally great food. The food is a blend of approachable Mediterranean food with some of the flare of French cooking. These dishes are well complimented by classic Bahamian dishes.
Jacques has been a part of many top restaurants in London including the two Michelin star restaurant The Square in Mayfair, London and two Michelin star restaurant The Ledbury in Nottinghill, London. Jacques has always prided himself and emphasised to his staff the importance of each customer.
